The Recipes That Built a Culture
Berber cuisine is one of the world’s great culinary traditions — and almost entirely unknown outside Morocco. This half-day experience takes you off the tourist circuit and into the living kitchens and markets of Tinghir, where food is still cooked on open fire, spices are still blended by hand, and the recipes haven’t changed in centuries.
You’ll spend the morning with Fatima — a grandmother who has been cooking for guests in her home since 2014 — learning to prepare a traditional lamb tagine with preserved lemons and olives, fresh msemen flatbreads, and the sweet almond pastilla that Berber families serve at celebrations. Then it’s on to the weekly souk, where your guide helps you navigate the spice vendors and explains the complex social ritual of bargaining in a way that’s genuine, not performative.
The afternoon ends at a Berber women’s weaving cooperative, where you’ll see traditional rug-making techniques demonstrated and have the opportunity to purchase directly from the makers at fair prices.
